Conrad Maldives Rangali Island will welcome Michelin-starred Chef Theodor Falser from 19–24 October for its Michelin Master Series, bringing his nature-led approach to cuisine from the Dolomites to the Indian Ocean.

Set across two natural islands in South Ari Atoll, the resort has long made dining part of its identity, with 12 restaurants and bars spanning underwater dining, Japanese teppanyaki, Italian cuisine and an extensive collection of wines. Among them is Ithaa Undersea Restaurant, the world’s first undersea restaurant and one of the settings for Falser’s upcoming series.

The Italian chef will lead a collection of experiences across the resort, moving from an intimate sunset welcome and Champagne cruise to a seven-course dinner beneath the ocean and a final evening on the beach.

Falser brings more than a decade of Michelin-starred experience to the Maldives. As the driving force behind Michelin-starred Johannesstube, his cooking draws closely on the Dolomites, with seasonal ingredients, craftsmanship and the relationship between food and place shaping his approach.

At Conrad Maldives Rangali Island, that philosophy will find a markedly different landscape, with each experience placing his cooking within another side of the resort’s relationship with the sea.

A Sunset Welcome

The Michelin Master Series begins on 19 October at Rantheli, where Falser will meet guests over handcrafted cocktails and canapés as the sun sets over the Indian Ocean.

The intimate Sunset Soirée offers an introduction to the chef and the inspiration behind his Michelin-starred cuisine before the programme moves across the resort over the days that follow.

Dinner Beneath the Ocean

On 20 October, Falser heads below the surface for The Ocean’s Table at Ithaa Undersea Restaurant.

Set beneath the Indian Ocean, Ithaa is surrounded by panoramic views of the coral garden, with reef sharks, rays and tropical fish moving beyond its curved glass walls.

Here, Falser will present an exclusive seven-course dinner for the Michelin Master Series. The evening places a chef whose culinary philosophy has been shaped by the mountains within one of the Maldives’ most distinctive marine settings, allowing his approach to food and place to take on an entirely different context.

Champagne at Sunset

The following evening moves from beneath the ocean to open water. On 21 October, guests can join Falser aboard the Majesty Yacht for an intimate Sunset Champagne Cruise.

Champagne and canapés accompany the 90-minute journey, creating a more relaxed opportunity to spend time with the chef away from the dining table as the yacht sails across the Indian Ocean at sunset.

The experience also reflects the wider character of Conrad Maldives Rangali Island, where days extend beyond the two islands through yacht cruises, diving and snorkelling across South Ari Atoll, an area known for year-round whale shark encounters.

An Evening by the Sea

Falser’s programme concludes on 24 October with an intimate five-course dinner on Deluxe Beach.

Local Maldivian lobster will feature in the evening, accompanied by Ruinart Champagne and served beneath the stars. The setting brings the series back to the relationship between food and its surroundings that has long informed Falser’s cooking, this time with sand and sea replacing the alpine landscape of the Dolomites.

Across four experiences, the Michelin Master Series moves between sunset, ocean and shore, offering different encounters with Falser and his cuisine while drawing on the settings that have shaped Conrad Maldives Rangali Island’s distinctive culinary identity.
